Choosing the Christmas Wines . . . with Mr. Danny Lycon, Master Somelier at t h e Great Southern Hotel, Galway. two of this years Beaujolais Nouveau (1) Piat - a little sweet ( 2 ) Thorin - a little dried, t an recommend both of these wines. Both are available in Galway. If you want to dig a little deeper into the purse (or is it the wallet) try one of the Beaujolais Villages 1978 or one of the nine parish wines of Beaujolais such as Moulin a Vent, Fluerie Brouilly, Morgan, Julienas. T h e s e are fuller wines, delightfully fruity and full. More substance than the Noveau. These are available in a Salthill wine shop. Make sure you get '76 or ' 7 8 . Christmas, Christ's birthday, a day for all the f a m i l y t o get together, young and old, aunts and uncles . . . Children will play with their toys and be happy with Cola or Orange. But what about t h e older generation. Whether they k n o w about the qualities of fine wines or not . . . give them the best you can afford. No plonk please. We must remember that wine is one o f God's gifts t o mankind... Good wine always pleases. Now to consider what we are eating . . . The traditional turkey and ham, or m a y b e goose, pheasant or joint of beef. With turkey I suggest a light red wine with good flavour, nothing better than the Beaujolais Nouveau 1979, easiest of all wines t o drink. It would also go well with beef. I have only tasted Claret lovers will like some distinguished claret. You can get a magnum (2 bottles) of Chateau Malescot St. Exupery, Margaux 1973. Delicious, light, elegant and fine flavoured. Just the wine for a turkey or joint of beef. Goose needs a wine with plenty of b o d y and bouquet. How about a good Burgundy. Beaune du Chateau (Bouchard) is a wine with rich colouring and excellent bouquet. Full of flavour, lasting finish. Available in Shop Street. The Pheasant needs a fairly robust wine with good breeding. Chateauneuf du Pape (St. Pierre) 1975 or Crozes Hermitage 1973 are available in Salthill. A good example of the style of southern Rhone wines. Hocks and Moselles are appreciated by the occasional wine drinker. If he does not like red wine with his Christmas dinner, there are a fine range of these in the supermarkets and wine shops in Galway. For myself I like them best with the mince pies at the end of the meal. And speaking about the end of the meal for those who don't like Christmas pudding a d e l i c i o u s sweet can be enjoyed by blending a glass of Baileys or Carolans Irish Cream with a scroop of vanilla ice cream. What about Champagne for the toasts. It is the only wine that leaves a woman beautiful after drinking (quote from Madame Pompadour). There are a dozen different brands, all good, if you can afford t h e m . If n o t try the excellent Cordoniu Sparkling Wine (made by the C h a m p a g n e methode) at about one third of the price.
