" I s h o u l d n ' t r e a l l y , t h i n k o f S i e v e t h e flour a n d salt a n d s ! " O n e h e a r s t h i s , d e l i b e r a t e s a n d then f a l l s once m o r e r u b in the margarine to m a k e hegin dieting t o m o r r o w , fine c r u m b s , t h e n a d d t h e w a t e r is g o i n g t o r e f u s e d u m p l i n g s t h a t l o o k l i k e those i n t h e t o m a k e a firm p a s t e . P e e l a n d core t h e apples, ( d o n o t choose that t h e q u a n t i t i e s g i v e n m a k e a v e r a g e size a p p l e o n e s t h a t a r e v e r y l a r g e ) , l e a v i n g . . . but five dumplings m a k e a better picture! t h e m w h o l e . R o l l o u t the pastry a n d cut out four rounds each o n e l a r g e e n o u g h t o encase t h e apple completely. Put one apple on each r o u n d , blossom side d o w n , d a m p e n the pastry a n d lift o v e r t h e a p p l e s a n d press t h e edges t o g e t h e r t o m a k e a firm s e a l . N o w turn the apples over to s t a n d o n t h e s e a l e d sides. C u t a half inch r o u n d f r o m each top a n d fill t h e c e n t r e o f t h e a p p l e with apricot j a m . R o l l out the pastry t r i m m i n g s a n d cut into rounds w i t h a 2J inch r o u n d c u t t e r , a fluted o n e i f p o s s i b l e , then cut a h a l f i n c h circle f r o m each r o u n d , d a m p e n the fluted rounds a n d put on top o f the dumplings with the apricot j a m s h o w i n g t h r o u g h . M a k e a glaze by boiling the sugar a n d water together a n d brush the dumplings a l l o v e r w i t h it. P r e - h e a t t h e oven to 4 0 0 deg. F. G a s 6 a n d bake the dumplings on the middle shelf f o r 2 0 minutes, then lower the heat to 3 5 0 deg. F . G a s 4 and bake for a further 15 minutes. Serve hot with cream.

( 1 2 0 g r a m m e s ) seedless raisins o r sultanas J pint unsweetened apple puree 3 t a b l e s p o o n s c o f f e e essence Topping: 1 neaped tablespoon apricot or tangerine j a m 1 o z . ( 3 0 g r a m m e s ) l u m p sugar coarsely crushed T o M a k e the C a k e : Sift the flour, soda and c i n n a m o n . C r e a m the butter and sugar, a d d the v a n H I a a n d beat u n t i l fluffy, I h e n a d d t h e e g g o r eggs a n d beaf a g a i n . F o l d in t h e raisins a n d nuts w i t h o u t beating. Stir in the dry ingredients alternately w i t h the a p p l e p u r e e m i x e d w i t h t h e c o f f e e essence. T u r n into a well-greased b a k i n g tin 9 x 7 x 2 ins. a n d b a k e a t 350 deg. F. G a s 4 for 1 h o u r . T u r n o u t at o n c e o n t o a w i r e t r a y a n d at o n c e s p r e a d t h e t o p with apricot or tangerine j a m a n d sprinkle the sugar o n t o p . Eat hot or cold. If you like pancakes, try stacking t h e m w i t h sweet a p p l e sauce between each pancake, s o m e l i k e t o a d d l e m o n c u r d as well.

Funds needed for Order of Malta
In a downpour of rain 70 members of the Order of Malta walked 10 miles on Sunday, October 8th to raise money for the Order of Malta Centre. On Saturday, the 7th a Cake Sale was held in aid of the Centre. The Order now finds it will be necessary to have an in tensive fund raising cam paign to be in a position to extend its present facilities for Old Folk. The Order are always looking for extra help especially female helpers, also young men who are able to drive, suitable to be trained as ambulance drivers so that the only free voluntary ambul ance service in Galway city can also be extended. Volun teers should call to the Order's H.Q. on any Tues day night and school-going students on Friday nights.

Galway Motors sold Jim an Avenger now his son is an early riser
