A n old f r i e n d of m i n e u s e d t o l i v e on t h e b r e a d line w h e n h e was a student, but he always managed t o make t h e most delicious looking ( a n d t a s t i n g ) me als b y stuffing v e g e t a b l e s w i t h a v a r i e t y of fillings. A s he w a s a n A r a b h e w a s s k i l l e d in t h e u s e of s u b t l e Middle Eastern spices. S o m e of t h e s e s p i c e s a r e now available in t h e shops in - G a l w a y a n d a r e well w o r t h i n v e s t i n g in. Cinnamon i s used exten sively i n t h e W e s t , b u t m a i n l y in f r u i t c a k e s w h i c h is a p i t y a s t h i s a r o m a t i c s p i c e is w o n d e r f u l w i t h sa voury dishes. Coriander, a b i t t e r s w e e t s p i c e is excel lent f o r drawing out t h e flavour of c e l e r y . M a r j o r a m must b e used sparingly, b u t i s v e r y effective f o r s u b t l e a n d a r o m a t i c cook ing. P a p r i k a is a c o u s i n of t h e r e d p e p p e r a n d is g r e a t for g e n t l e colouring a n d flavouring. Saffron adds zest a n d c o l o u r i n g t o r i c e d i s h e s , b u t is e x p e n s i v e , so

8 large Cabbage Leaves. 2 oz. Rice. 3 oz. G r a t e d C h e e s e . p i n t B r o w n Sau ce. 1 o r 2 H a r d b o i l e d E g g s . 1 large skinned a n d chop ped Tomatoe. 1 Teaspoon P a p r i k a . Salt a n d Black Pepper. Wash Cabbage leaves well a n d b l a n c h t h e m i n boiling water f o r a few m i n u t e s , u n t i l soft a n d e a s y t o r o l l . D r a i n well. Cook t h e r i c e f o r fifteen m i n u t e s in boiling salted w a t e r . Mix r i c e , t o m a t o e , cheese, eggs a n d paprika and season with salt and p e p p e r . P u t s p o o n f u l s of t h i s m i x t u r e i n t o e a c h cab b a g e leaf. Roll t h e m u p and secure with some thread. P u t into a casserole and cover with the brown sauce ( o r tomatoe puree and water). Cover with a lid o r s o m e tinfoil a n d cook for a n h o u r in a m o d e r a t e oven. Rice. 1 L a r g e O n i o n , j Clove Garlic. 2 L a r g e T o m a t o e s . 4 Sliced O l i v e s 1 r e c o m m e n d T u m e r i c for t h e s a m e b a s i c effect i n a ( o p t i o n a l ) , j T e a s p o o n Cin m o r e economic way.
