Radisson Galway teams with local charities as part of Responsible Business Programme
BY JULIE TIERNEY
Staff at Radisson SAS Hotel & Spa Galway recently took part in a worldwide programme adopted by all Radisson SAS hotels to thank the Galway community for its continued support. The initiative first began in September 2003 as an initiative undertaken by global hotel chains under the direction of the International Hotels Environment Initiative, HEAM (Hotel Environmental Action Month) which comprises a programme of events to raise environmental awareness among guests, staff, and public, with the primary objective of building awareness of environmental and social issues that face each region. Each week during HEAM staff from the Radisson SAS Hotel & Spa Galway undertook a series of good deeds and charity events, donating their time, effort, and cash raised to a series of deserving causes and charities. One of the events held by Radisson SAS Hotel & Spa Galway under the Responsible Business Programme was a water polo game to raise money for Enable Ireland, a follow up to the very successful game held during last year's HEAM.

"I most recently owned and operated my own fine-dining restaurant in Aylesbury, just outside London, and wanted to continue in this area,"he explained. "Galway is a magical place, but I felt that I was hoping for too much to get the perfect job here. When I was made aware looking forward to a busy Christmas season," he added. Prior to owning his own fine-dining restaurant in the UK Mr McCarthy had two very high profile positions as area manger for Green King and also as area manager for Allied Domecq. He officially took up his position in Malt House last Monday but has been working behind the scenes in different areas over the last month, namely with the new menus, the new logo, signage, and the soon to be launched revamped website. "After meeting head chef Brendan Keane, it gave me a great sense of what Malt House Restaurant is all about and the fantastic reputation that I am inheriting. It is a challenge to improve on such a good business but this is what I am most looking forward to. Over the next few months I will be getting to know the team here, to know Galway and our customers. I am equally looking forward to developing new customers for the business." The restaurant is planning to introduce some exciting new changes starting with fantastic menus for Christmas.

Paul McCarthy of the position in Malt House Restaurant, it was exactly what I was looking for. A citycentre restaurant, a head chef that believed in seasonal menus driven by the freshest and finest local ingredients available and it was located in Galway. I am
